Guinness Chocolate Cupcakes
Every once and a while, a friend or family member will send me a recipe to try. This Guinness Chocolate Cupcake recipe was a first. Do not be put off by the sound of Guinness being added to anything sweet. Guinness stout enhances a lot of different flavors in sweets, one being the sinful bad boy of them all…Chocolate.

This recipe, which has been posted below, is from therepressedpastrychef.com. The only change that was made from our test kitchen was taking out 2tbsp cocoa powder, and using a little Guinness and vanilla instead. If the icing seems to be a little thin, add powdered sugar by the tablespoon to thicken.
Guinness makes the chocolate in the cake pop with flavor and leaves it very moist. Experiment with this recipe by adding a small piece of semi sweet chocolate in the center of the filled baking cup. When you ice the cupcake make swirls on the top to simulate a freshly poured pint of Guinness. Basically have fun and share some with friends or family, if there is any left.

Most of the recipes that will be posted on here can be baked in a roaster oven outside. Due to the extreme heat you will experience here in Glendale, outside cooking may be a relief. Feel free to comment on any heat saving tips.

Ingredients
4 ounces unsalted butter
10 ounces dark brown sugar
2 medium eggs, beaten
6 ounces plain flour
1/4 teaspoon baking powder
1 teaspoon baking soda
7 fluid ounces Guinness stout
2 ounces cocoa powder
Method
Prepare 18 muffin tins with paper liners
Preheat oven to 350 F
Cream butter and sugar together
Beat in the eggs
Sift flour, baking powder and baking soda into a separate bowl and set aside
Stir Guinness into cocoa and set aside
Alternately mix in 1/3 of the dry ingredients and 1/2 of the chocolate mixture into the mixing bowl… starting and ending with the dry ingredients.
Pour batter into prepared cups about 2/3 full
Bake for 18-20 minutes
Cream Cheese Frosting
8oz Cream Cheese
3/4cupPowdered Sugar
1 tsp Vanilla, 1 tsp Guinness (optional)
(Alcohol is baked off during cook time just the flavor of Guinness will remain.)
